Sweet Corn are popularly known as Sugar corn or Pole corn belongs to the maize variety which are harvested when the kernels are immature (milk stage) and prepared and eaten as a vegetable, rather than a grain. As the name suggests, these have high sugar content and the kernels are juicy plump. Due to its sweetish and crunchy taste, they are popular in salads and steamed. Sweet corn is a variety of maize with a high sugar content. Sweet corn is the result of naturally occurring recessive mutation in the genes which control conversion of sugar to starch inside the endosperm of the corn kernel.
