It’s Mango Season – Avakai Mango Recipe

Ingredient

  • Cut mango pieces – 3kgs
  • Salt – 500gms
  • Red Chilli Powder – 450gms
  • Mustard Powder- 500gms (sundry n cool well before powdering)
  • Methi – 1 handful
  • Small Kabuli channa – few
  • Garlic – few n optional
  • Gingelly oil – 1kg

Steps

  • Wash n wipe well n keep it in sun for 10 mins
  • Get mango cut into medium pieces with shell n discard the seed as soon as it’s cut to avoid black stains
  • Wipe the pieces with a thin cotton cloth to remove any seed residue.
  • Take a big wide vessel
  • Mix all the powders n grains well n then mix in oil
  • Now add the clean mango pieces
  • Take a wooden stick n mix it all well
  • Transfer to glass jar n add some oil on top
  • Close the lid well n cover with Muslin cloth
  • Check on 5th day for taste
  • And check finally on the 10-15th day for salt n spices and store it well
